If you remember my post from earlier this month, we went strawberry picking at a near by plantation. We came home with the freshest, sweetest strawberries and decided to attempt making jam for the first time. I was looking for a recipe with honey instead of sugar and decided to Deliciously Organic's since it was super easy - for a kitchen novice like myself!
Strawberry Jam Recipe
7 cups chopped strawberries (washed and hulled)
1 1/4 cups light honey
2 tablespoons of orange juice
1 Granny Smith apple, peel and seeds removed, cut into a small dice (apples contain natural pectin)

Place strawberries, honey, orange juice and apple pieces in a large pot over medium heat. Bring to a simmer, stirring occasionally.
Simmer for about 25 minutes - and mash if necessary - until mixture reaches 220ºF (make sure this temperature is reached, if the berries cook too quickly the mixture will not gel). Cool jam to room temperature, spoon into jars, cover with lids, and store in the refrigerator for up to 2 weeks.

This jam was amazing! We've used it over toast, pancakes and waffles, I even like to add it to my vanilla yogurt. Next time I'm planning on adding other berries to the mixture.
